Peanut Chicken a la TAJÍN

Serves: 4 - Prep time: 10 minutes - Cooking time: 25 minutes



Ingredients
  • 4 chicken legs and thighs
  • 7 oz. salted peanuts
  • 2 beefsteak tomatoes, chopped
  • ½ medium white onion chopped
  • 5 tablespoons TAJÍN Clásico Seasoning®
  • ½ stick butter
  • 8 tablespoons vegetable oil
  • Salt and pepper to taste

Preparation

  1. Heat oil and butter, sauté the tomatoes and onions. Set aside. 
  2. In a skillet or griddle roast the peanuts, place them in the blender with the tomatoes, onion, a little water and TAJÍN Clásico Seasoning® (use enough water so that it’s not too thick). Add salt and pepper and let boil for 5 minutes. 
  3. Rub the chicken legs and thighs with a little bit of butter, salt and peppered and place in pre-heated oven (350 º F), bake for about 30 minutes, serve with peanut sauce, garnish with TAJÍN Clásico Seasoning® and accompany with fried potatoes.
