Peanut Chicken a la TAJÍN
Serves: 4 - Prep time: 10 minutes - Cooking time: 25 minutes
Ingredients
- 4 chicken legs and thighs
- 7 oz. salted peanuts
- 2 beefsteak tomatoes, chopped
- ½ medium white onion chopped
- 5 tablespoons TAJÍN Clásico Seasoning®
- ½ stick butter
- 8 tablespoons vegetable oil
- Salt and pepper to taste
Preparation
- Heat oil and butter, sauté the tomatoes and onions. Set aside.
- In a skillet or griddle roast the peanuts, place them in the blender with the tomatoes, onion, a little water and TAJÍN Clásico Seasoning® (use enough water so that it’s not too thick). Add salt and pepper and let boil for 5 minutes.
- Rub the chicken legs and thighs with a little bit of butter, salt and peppered and place in pre-heated oven (350 º F), bake for about 30 minutes, serve with peanut sauce, garnish with TAJÍN Clásico Seasoning® and accompany with fried potatoes.
